I’m just getting in from a nice and easy 3 mile morning run that was supposed to be at half marathon pace.
Got a little ahead of myself on the whole half marathon pace, but oh well.
I’m hopping on the Friday blogging bandwagon and would like to share some of my recent ‘favorites’ and things that I’ve been diggin’ lately. Let’s see where this goes.
I have been eating a sickening amount of fruit salad this week. I made this huge bowl on Monday and have been adding it to greek yogurt, cottage cheese, and of course enjoying it by itself. Summer fruits are so delicious I just can’t get enough of them. I think I’ll add some blueberries to my next batch!
Simple Charm Necklaces
Not sure why it looks like my chest is having an allergic reaction in that photo. Whoops! It seems like on TV, you either need to wear a big staple piece necklace or something very subtle. I’ve found myself really gravitating towards simple charm necklaces like these lately. I love the one pictured above that I got from a cute store called ‘Zing’ in Sioux Falls last weekend. My mom also got me a similar one with a circle charm as an Easter gift.
Cerise Limon La Croix Sparkling Water
I’m a big fan of sparkling water. I spotted this new flashy La Croix flavor in Target the other day, and when I saw a case was on sale for $2.99 I had to go for it. Plus, I love all things cherry lime (especially Sonic’s cherry limeade). If you’re a sparkling water drinker, I recommend giving this new La Croix a try.
I never want Summer. I’m sure that sounds nuts, but I’ve never been a fan of hot weather. On the other hand, I’m loving Spring. It’s been absolutely perfect in Sioux Falls this past week; highs in the mid 70s and very little wind. I’m dreading the 90 degree weather and humidity that’s just around the corner. I’m going to enjoy this ideal weather while it lasts!
Hope everyone is looking forward to their Memorial Day weekend! I’ll be working through Saturday but am hoping to get outside to enjoy the holiday weekend Sunday and Monday. Plus, the outdoor pool at my apartment complex is opening this weekend. Woo!
Since I moved to Sioux Falls, all my visitors have consisted of family members and Mike. This weekend one of my best friends from high school tagged along with Mike for a wild weekend in Sioux Falls!
It wasn’t really too wild, but it was a blast. Friday night we just stayed in and relaxed since I had to work the next morning. On Saturday they got to follow me around on the job and see just how glamorous TV life really is. HA!
For lunch, my friend Carly said she was feelin tacos. I remembered recently hearing about a new more authentic Mexican food restaurant in Sioux Falls, so we checked it out. Let’s just say this will not be my last trip to El Jalapeno.
I loved that they had so many different types of meat options. The chorizo was my favorite and the chicken was a close second.
After working through the rest of the work day, I headed back to my apartment to get ready for a night on the town!
We headed to Crawford’s, a pretty swanky little spot in downtown Sioux Falls. The wait to be seated was 45 minutes, so we chose to sit at the bar where we could still enjoy the full menu. The three of us decided to split three appetizers: chicken florentine flatbread, walleye fingers, and spinach & artichoke dip.
All the apps were on point, but I’d have to say the spinach and artichoke dip was my favorite. I also liked that it was served with cauliflower for dipping, not just pita bread.
The night continued at a bar just next to my apartment building with a few co-workers. For some strange reason I had my heart set on walking to a a nearby gas station for snacks at 2:00 a.m.? Bad idea.
After I whipped up some bomb sweet potato hash this morning (forgot to snap a pic), we headed out to see the sights.
It was a chilly day in the Sioux Empire, but a good one. I was very sad to see Mike and Carly leave this evening, but am glad I’m heading home to Minneapolis next weekend already and will see them soon!
Hey guys, I’m sick!
Being sick is no fun, especially when it’s Spring and perfect running weather.
I have a 9 mile run on the agenda today, but unfortunately I am in no shape to knock it out. I’ve been feeling under the weather since Easter, but on Saturday I took a bad turn and have just been feeling awful.
I spent most of my day yesterday trying to keep my food down. I plan on being glued to my couch all day with some essentials.
Just want to clarify that toilet paper is for blowing my nose since I’m out of tissue. I haven’t lost the ability to get up to use the bathroom.
Thank goodness Ree Drummond, The Pioneer Woman herself is making a delicious looking ice cream pie today. That should keep me entertained.
Never made an ice cream pie before. Now I’m intrigued. This one that I found on Pinterest looks legit, don’t ya think?
Peanut butter with an Oreo crust.
It’s pretty gross outside by normal standards, but for running it’s perfect, which is why I’m so bummed that I can’t get out for my run.
I’m tempted to just suck it up and run. Even if that means stopping to walk every once in a while, or being unable to breathe properly. On one hand I just want to get the run out of the way, and on the other I want to wait until I’m able to finish it strong and not suffer through it. Tough decisions!
Another thing that sucks about being sick: vegetables don’t make you feel better. At all.
Yesterday I tried to stick to simple foods like oatmeal, toast, soup, crackers. By the end of the day all I wanted was a bowl of broccoli and egg whites, but knew that would not sit well in my already upset stomach. Life is so rough! Help!
Alright, I’m off to watch The Pioneer Woman finish up the ice cream pie and some delicious looking pizza.
This will most likely not be an exciting Friday night. It could definitely be eventful if there’s a house fire or severe car accident, in which case I’ll have to drag myself out of my apartment to go shoot some video in the middle of the night.
For now, it’s looking pretty low key. Friday nights that I’m on call are usually pretty dull. I spend my time trying to find different ways to keep myself awake since I’m technically supposed to listen to the scanner until 2:00 a.m.. Here’s what’s on my agenda for the evening.
I should probably clean my apartment, too. It’s pretty gross right now.
I’m very excited for that there Arctic Zero. For those who have never had arctic zero, it’s basically calorie-less ice cream. By no means does it taste as good as ice cream, but it gets the job done for me. I don’t get it too often since it’s expensive, and it kind of freaks me out that it only has 150 calories per pint. One time I actually ate the whole pint and felt terrible. I think the artificial ingredients just don’t sit right with me, so it’s a once in a while treat.
It is spring in Sioux Falls! I’ve spent the past two weeks in a courtroom covering a cuh-raaazy sentencing trial, but the good thing is I’ve actually had a lunch break every day. Today I took advantage of the one hour lunch break and headed outside to enjoy the beautiful spring day.
I actually felt a little uncomfortably warm in the 70 degree weather. I don’t do well with the heat. But I had this little gem to cool me down!
It was a glorious lunch hour.
This is going to be a pretty boring post because I have honestly been consumed by work this week, and haven’t had much time to document my food and workouts. I did get a new gym membership, though that I really want to touch on. I also have an 8 mile run coming this weekend that I’m sure will be blog worthy. Ta-ta for now!
When it comes to sweets, there are a few things I cannot turn down: oatmeal raisin cookies, dark chocolate, and banana flavored candy. I love ice cream, but I can usually control myself around it.
Well, this weekend was full of ice cream treats and I’m very happy I didn’t turn them down.
Mike was here this weekend and finally there was nice weather in Sioux Falls. But first, the ice cream.
The frozen yogurt came after our dinner Saturday night. I chose rice krispie flavor, vanilla, and candy bar topped with brownie chunks, fruit, and a random frog that Mike threw on top of mine. Thanks.
Dinner at Grille 26:
I didn’t make it home from work until around 7:00 Saturday night, so I quickly changed and got ready to head out for a late-ish dinner at Grille 26 in Sioux Falls. I’ve been wanting to try the restaurant ever since I moved here in August and am very happy I finally did.
Grille 26 is my kind of place; not too fancy, but very nice atmosphere, food and service. They had a really good cocktail menu, so we started out with a couple drinks. I went with a “rosemary cooler” with lemonade, cucumber, fresh rosemary, and Smirnoff. It was nice and refreshing. Mike went with the “northern lights” cocktail with Yukon Jack Jacapple, cranberry and lime. Also very good!
Next we placed an order for the spinach and artichoke dip to start.
They could have just served the bread and I would have been happy. That stuff was so dang good. The drinks and appetizers were great, but my entree was the real winner. I went with a brick oven salmon on top of two mushroom risotto cakes with roasted mushrooms and spinach.
I’m all about textures, and the crispy crust on those risotto cakes was perfect. As soon as I saw meatloaf on the menu I knew Mike was sold.
His was also great. I’m usually more of a ketchup person when it comes to meatloaf, but the gravy actually went well with it.
We both cleaned our plates as usual, and headed out for froyo! We had plans to spend the rest of the night out on the town, but as soon as the sugar from the frozen yogurt got to us we were done, and passed out on my couch before 11:00. Real party animals. Mike left yesterday, so today is my day to get all the things done for the week. That includes a 7 mile run today. I’ll be heading out shortly and am excited to share how it went later today!
I don’t normally have time to blog in the morning, but I’m a lucky girl today and don’t have to head into work until noon! Great start to Friday.
I took my time waking up this morning with a 3 mile run on the agenda for my half marathon training. Since I had the extra time, I decided to properly fuel my body with a little snack before hitting the trail.
Rice cake topped with PB2 and craisins. Accompanied by a cup of hazelnut coffee.
Normally I don’t eat anything before my morning workouts, because time is so limited and I need at least 45 minutes to digest anything before exercising or I’ll cramp up instantly. I don’t like feeling like I’m depriving myself in the morning, especially before a run. The second my stomach starts grumbling in the middle of a workout I just lose all motivation and energy, and start wanting to eat my hand. I was very excited about getting to put something in my stomach before my run this morning.
It’s amazing how much more I enjoy running outside than on the treadmill. It was still a chilly 35 degrees when I left my apartment, but the run seemed to fly by.
I’ve managed to take about 20 seconds off my average 3 mile run pace over the past week. Hopefully that trend continues because I’ve really become a slow poke.
I followed up the run with a good long stretching session and a strawberry banana spinach protein smoothie.
I figured I’d get a little festive with St. Patrick’s day weekend on the horizon. I threw the following into the blender for this concoction:
- 1 frozen banana, peeled
- 5 frozen strawberries
- 1 scoop vanilla protein powder
- 1 5.3 oz container Dannon Greek Light n’ Fit strawberry yogurt
- 1/3 cup chopped frozen spinach
- about 1/2 cup water
- handful of ice cubes
Can’t go wrong with a post-run smoothie! Too bad now I’m freezing which means it’s time for another hot cup of coffee before I have to get ready for work! I’m super excited for this weekend. Mike is heading here tonight, and tomorrow is my co-worker’s birthday celebration. We have plans to go to a hibachi grill, something I haven’t done since high school. I’m ready to feast!
While everyone is slowly easing into the week on this lovely Monday, I’m enjoying the tail end of my weekend.
Mondays are usually my days to get things done, since it’s technically my Sunday. On the list today was a workout, run several errands, and dive into some Spring cleaning!
After a quick breakfast and some TV watching, I hit the gym for a great legs workout.
I rounded out the workout with 20 minutes on the elliptical. Got me nice and energized for running errands! After hitting all the spots on my checklist, it was time for lunch. I was craving a breakfast scramble yesterday, but ingredients in my apartment were slim. After a tip to the grocery store yesterday, I was stocked up! My breakfast scramble turned into a lunch scramble.
I’m a huge fan of sweet potato scrambles or hash browns. I make at least one of these delicious dishes each week. Today’s rendition included about half a sweet potato cut in cubes, chopped onion, spinach, red bell pepper, egg whites, sliced turkey, and shredded cheddar cheese.
I topped my scramble with salt, pepper, and sriracha. Tasty! Perfect Spring cleaning fuel! I made a checklist for everything I want to accomplish around my apartment in the next month or two. Last night I began tackling organizing my closet. I have no idea how I’ve managed to obtain so much crap in my 23 short years. Today I’m hoping to reorganize the bookshelf in my living room and dust all surfaces.
It’s go time.
